Winemaking / Maturation
Gently vinified in stainless steel open fermenters. Hand plunged and basket pressed at dryness. 30% had up to 2 weeks extended skin contact. Maturation for 18 months in 25% new and 75% older French oak barriques.
Bouquet
Lifted cassis and blackberries overlay hints of chocolate, spice and earthiness. Cedar and savoury notes from the French oak integrate seamlessly with the fruit.
Palate
Savoury and earthy notes flow through from the nose and dominate the front palate. Sweet and luscious dark cherry characters provide a rounded yet elegant wine with the ample yet subtle tannin and cedary oak providing length and finish to the wine.
Complex, broad, developed toasty/gooseberry nose. Tightly structured palate with nice lime/lemon fruit. Cellaring time 2014.
